So, it is getting cooler and cooler and rainier and rainier now that fall is in its full swing. And what better way to start a rainy day out than not having to wake up and leave the coziness of your bed. But, alas, some of us have to work, and I don’t know about you, but I find it pretty difficult having to wake up and go to work without my coffee and my protein.
Lately I want to take my protein in а universally liked form, that of pancakes. I have found so many Easy 3 Minutes from Scratch American Pancake Recipes, and so many of them were for pancakes packed with protein that I think I will use MyGreatRecipes forever! Seriously, there were so many pancake recipe ideas that I couldn’t decide on one.
Quinoa Pancakes
Of course nothing says protein like quinoa, and only until recently I had no idea it existed let alone it made for so good pancakes. But we are never too old to learn, so I figured why not try a batch of the Protein Quinoa Pancakes. Honestly, I don’t know if I have ever tried something yummier in my life. The quinoa and the bananas together with the coconut sugar and the Greek yogurt are definitely a combination that should be celebrated. Peanut Butter Flaxseed Pancakes
I might not have been familiar with quinoa, but peanut butter is definitely something I have always been grateful for. I remember the peanut butter and jelly sandwiches mom would put in our lunch-boxes when me and my brother were young. She always said, peanut butter will keep your bellies full, and by the time you get home you will have just enough room left for our family dinner. Following my mom’s advice, I use peanut butter whenever I want an instant appetite sating and it is just why I use it in lazy rainy mornings. The Peanut Butter Flaxseed Pancakes are not only protein-packed, but incredibly healthy and ridiculously tasty.
I know that whenever I start my day out with a stack of these, it will be a really good day and I will be in a radiant mood that will keep any gloominess away.
